The milter is not being called when that email is submitted as the submission was not done through SMTP. That's why you don't see any dkim-filter related entries in the log. If the email is submitted through SMTP to localhost, it will be signed.
I am not sure. Emails sent exactly the same way (from a local webclient) for the szalbot.homedns.org domain do get signed. Here's an example:

BTW - in the meantime I upgraded to dkim-milter-2.5.3, so the above tests were done with this version.The latest version in the FreeBSD ports tree is 2.5.5.
