More than likely the Apple Mail client is doing something Thunderbird doesn't 
do that your MTA, or one downstream from you, alters or removes prior to 
relaying.  This could be as simple as space compression (Sendmail does a little 
bit of this, for example), or header rewriting if you have masquerading turned 
on.  It's hard to tell without you signing with a "z=" tag, or capturing 
canonicalized forms and comparing them to the same produced at the verifier to 
see what changed.

This is the first such report that I've heard of about Apple Mail, at any rate.
