The difference is the "c=relaxed" allows messages that have undergone some minor modifications (e.g. whitespace removed) to pass DKIM verification. "c=simple" does not allow any modification to the message. If "c=simple" works for you, there is no need to change it. There are some security issues when using "relaxed" for the message body.
