I have not touched zimbra in a while, but basically you have to do all this work with postfix included in zimbra, except the config files for postfix are semi-managed by zimbra.

As for sending, if you have done DKIM and SPF, you just need to publish the appropriate DNS record. http://www.dmarcian.com can help you for that.
