When I listen to music that has an odd time signature, my experience of the music is somehow different from 4/4 - obviously - but I'm not sure how to put my finger on what the difference is. Since the overwhelming majority of music is 4/4 or some derivitive of it, there's always a sense of familiarity to the beat when listening to yet another 4/4 song that isn't there when you hear something with an odd time signature. But that sense of familiarity isn't something you notice - its something that gets ignored because your brain already knows the phrase, it doesn't waste any time wondering "When does this measure end and the next one begin?" The same can be said of 3/4 music too, I think. Once you get into 5, 7, or 13 beats per measure, the phrase of the beat is obviously getting longer. Maybe the difference has something to do with having to wait longer for the beat to repeat... or something to do with slowly becoming more comfortable with a beat that (usually) requires you to take 2 more familiar time signatures and alternate between them. For 5/4, for instance, maybe you'll hear it as 3 beats then 2 beats.. then 3 then 2.. or maybe first 2 then 3, etc. Or maybe you'll hear it more like 4 beats with an extra 1 on the end.
