any old fool can chop sampled breaks up but only a musician create a beat from scratch. Some people i know who play the drums can program absolutley insane beats from scratch with nothing but a few samples and a bit of point and click, and to be honest - most of the people in my camp hardly ever use loops like amen breaks in their tracks.
One thing that we have been doing to get 'real' sounding beats (and this sounds amazing when done right) is fully micing up a drumkit and running it through the desk into an ADAT and then getting our drummer to just bash out some beats and fills.
