As far as I know each track can only output to 1 midi channel. You can set the track to 'any' and then the midi channel of the notes on that track are set within the key or grid editor on a note by note basis.
The best thing to do is have two tracks but make ghost copies onto the second track rather than normal copies. Then when you edit the parts on the first track, any changes will be replicated in the ghost parts on the second track.
