A buddy of mine has started using Ableton Live under OS X with great results. It's sort of like being able to mix different parts of several different tracks all at once, and you can add in some of your own loops or tracks, too.
I've started using MegaSeg (http://www.megaseg.com/) under OS X with mixed results so far. It does the job, and seems to work fine using two independent audio interfaces (the built-in audio on the g4 powerbook and a USB iMic from Griffin Technology), but playing mp3's over the lan at my studio didn't work as well as expected. I have since upgraded to beta4 from beta1 and also copied the mp3's to the local drive. I haven't had a chance to take it for a test yet, but that should help if not solve the problems.
