Off the top of my head, here goes: you're going to need a recording device 
(DAT minidisk, computer or cassete if you don't care about lower fidelity) a 
laptop with an audio editor, a good amount of memory/hd space and a 
soundcard with analog ins would be ideal.

Then you're gonna need micropohones to collect the audio from the speakers 
and the audience. A wireless mike rig would be good for the audience, that 
way you could have someone run out to them ( ala your favorite tralk show) 
with the wireless when they wanna speak.

Your gonna need at least a basic board to plug the mics in, the output of 
which you will run into your recording devvice. that should get you started.
