hrm... good sound? ;) really though, if you have quality gear like a good amp and quality studio monitors you will be amazed at how much hiss and noise consumer level audio cards have. the major benefits of pro cards are: high signal/noise ratio, low latency, higher sampling rates (eg, 96k / 24 bit), multiple ins/outs.
as to which pro card to buy? that is a topic of much debate and research :)
