The piano roll is it.  Personally, I use the step sequencer for basic beats and monophonic synths like the TS-404.  But, the piano roll offers much more in terms of control and when you draw a note of "x" length it will only play for "x" amount of time.  Unlike those infinite triggers of the note in the step sequencer.  As your production becomes more sophisticated you will begin to use the piano roll more and more.  However, if you are producing techno, house or trance type stuff, the step sequencer will still be a big deal.  Though the new Drumsynth is played from the piano roll and it does a very good job...
