You can use these settings:
post_addhead1 X-header-name: Report abuse to [EMAIL PROTECTED]
and
hdr_remove x-header-name,other-header.name
And those headers will be removed before sending messages upstream.
However, I'm not sure either of those really help if your usptream site is
adding this header, the best you can do is add your own header as well to
your own local posts using post_addhead1
