According to the documentation, the following should work for
OS-installed fonts:
<?xml version="1.0"?>
<fop version="1.0">
<renderers>
<renderer mime="application/pdf">
<fonts>
<auto-detect/>
</fonts>
</renderer>
</renderers>
</fop>
Maybe you could give those a try?
