You can install the docbook schemas and stylesheets using the normal Unix tarballs of course. However what I usually do is to use MacPorts, as that won't modify any Apple-supplied stuff, it patches things (if necessary) to make them build and work on OS X, and is a convenient way of installing packages like this.
