The entire Solaris Documentation collection is available through 
docs.sun.com. They have been updated for Solaris 10, Update 4 (just 
released)  and that brings them very closely in line with the recent 
OpenSolaris builds. Two or three of these are very useful for beginner 
users. I would probably suggest the User Guide (though it is labelled 
"Advanced") and Java Desktop System Release 3, User Documentation as a 
good start, here:

I do not know what rules Sun has about their use in classroom 
situations, however.

are good places to start. You may also find items of value here:

There are some valuable links here. For your needs, you may find the 
Resources section of most use.

For programming in the (Open)Solaris environment, Rich Teer's "Solaris 
Systems Programming" is a fundamental resource.

Those, together with Brian's pointers, should get you well on your way. 
Which books/documents you choose will really depend on what you are 
hoping to achieve. If you are simply wanting to teach users how to use 
OpenSolaris, Solaris Internals and Solaris Systems Programming will be 
of very little value. If you are wanting to teach programming to 
students new to OpenSolaris (but may have experience in perhaps Linux, 
for example) then documents like the Java Desktop user documentation 
collection may not be very useful. And so on...

Browse through the docs.sun.com Solaris 10 collection and look through 
the links on the OpenSolaris.org and Genunix.org pages I've listed above 
to find material that is aimed at what you are wanting to do. The 
documentation on OpenSolaris.org and Genunix.org is constantly evolving. 
As people have time, they will add materials to these sites. The DocBook 
sources on opensolaris.org are being updated (and usually expanded) 
almost monthly.
