Paul, I think there are two ways to look at this.
If all you need is a way to produce a hardcopy version of the wiki (provide a snapshot), then there are various ways to do this with existing wikis. Many wikis provide a PDF export. There are usually limitations on this, but it does provide the basic "hardcopy" media that some people need. If you need to capture the information in a structured way for reuse and round-tripping, then that is a different animal and it is a much bigger problem, and I'm pretty sure there is not easy answer for this if you want to retain the ease-of-use that wikis provide.
