Eating my words ... there is a DocBook Wiki that already exists.

Haven't tried it out yet myself, but it seems to still be somewhat actively
maintained, which is encouraging.
moinmoin seems to have a DocBook export capability, and overall I know it is a
good solid Wiki, so it is definitely another option.
