Your data fixtures are incorrect. They should be:

User: Dieter

The relationship you defined between Profile and sfGuardUser is aliased as
User so you must reference it that way. Also, in Doctrine it is not
required to specify any configuration for profile in app.yml. All you have
to do is define the relationship between the models.
