I did find a way to do my request with out calling the paginator using only 
QueryBuilder and EntityManager.

So I still do this : 
$qb = $this->em->createQueryBuilder();
$qb->select('q', 'sc', 'd')
        ->from('ECT\Entity\entity', 'q')
        ->innerJoin('q.entity2', 'sc')
        ->innerJoin('q.entity3', 'd');
$qb->getQuery();
But then, I only do $qb->getResult();

No Pagination, No FirstResult nor MaxResult.
