AFAIK, LibreOffice's icon set defaults to the icon set for the
operating system in use, despite the necessary set being called Galaxy
(default). And you are NOT looking in the right place, because "Human"
isn't even one of the choices in LibreOffice. On Ubuntu, the choices
are Automatic (Tango), Galaxy (default), High Contrast, Crystal,
Tango, and Oxygen.

Have you got a copy of "Producing LibreOffice User Guides"? If not,
get it from Alfresco, English > Documentation > Resources > Drafts. In
it, on page 4, is a description of how to find and set the LibreOffice
icon set and a picture of part of the relevant dialog (which has the
title Options - LibreOffice - View). The doc also contains some other
setup tips. Some details (such as which template to use) are a bit out
of date, but the info on the icon set is correct. (I am working on
updating other topics.)

Open LibreOffice. INSIDE LibreOffice, go to Tools > Options >
LibreOffice >  View. There you will find what I'm talking about in the
User Interface section of that page; under Icon size and style, choose
Galaxy (default).
