I agree changing the head gaskets if you're already this far is a good idea. I was pleasantly surprised at the new life headgaskets breathed into my engine with ~165K miles on it. Felt much much better after the swap. it is a lot of work, but you've already done the most of the difficult work already.

If it was me, I'd pull the heads, and then I'd also have them checked for warpage. This way you get new headgaskets installed, which is worthwhile on a high mileage engine. Pulling the heads isn't too much more work considering where you're at: just the lower intake and the exhaust manifolds need to come off, and then the head bolts. Then you can remove the valves, roll the valve stems along the edge of your workbench and see if there's any wobbling. Anything else is just guesswork.
