Thanks for this answer. Actually my expert uses Coala, but accepts to
import files .txt, .xls, etc. So I likely can use Dolibarr.
Should I affect an account number for any product, customer, provider, etc?
How can I produce a useful "journal"?
For a company, should I use simple account or "creances/debit" one?
I guess I'll be unable to "ventilate", but what table can I produce to
be imported easily in Coala by my expert? Does it need accounts, etc?
Does Dolibarr do accounts movements (411 while the customers hasn't
paid, then transfer, etc)?
Sorry but I really start with management, I'd like to keep Dolibarr to
communicate with account expert. And so my English is approximative for
this matter.

For accounting you have at least two alternatives.
If you already have an accounting software, (shameless plug here) we
developped a module to export accounting data from Dolibarr which is
available at Dolistore.

If you want to do most of your accounting tasks into Dolibarr, the
upcoming release, which should be released shortly, will have such a
module as an experimental feature.
Keep in mind, however, that French tax regulations are very picky
about the software you use and, unfortunately, free software won't be
accredited anytime soon. Using free software for this particular task
is still a big leap of faith.

Does Dolibarr provide noawadays a phpcompta interface or a
specific-accountability module compatible with French rules? What
the status of such project and is there a subject about the cost
of such dev? Is ti possible to help it?
Same question for transport and meetings notes module: does it
have evolutions or extensions?
Otherwise, I plan to use bank module to play with accounts and
classes, however it is manually and so, more dangerous.
