Thanks for the kind offer.  After some hunting around it seems others[1]
have done our work for us so we ordered a pair of these[2].  They are
basically the same probes the Huky roaster came with, for better or worse.
They've lasted a while; we've ran close to 150lb of beans through the
roaster.
