Those at Open Source Hardware Users Group (OSHUG) http://oshug.org/ should be
able to help you via their discussion group. I happen to know one of the
organizers of OSHUG and know that they have definite knowledge about Asterisk,
PBX etc.
Its also possible someone listed here might be able to help:

One of my ex-students manages a company here in Dorset that uses
Asterisk as a pbx for some of their customers and have been doing so for
a few years. It is a Dorset based Company. I can give you a contact
off-list if you like, but without asking I shouldn't put his name up
here.

Thanks for these leads. I'm currently reading and researching, prior to
assembling a simple test platform. Some initial questions, like cards
that definitely work with Asterisk, I think I now have the answers to.
Once I get the test setup built I'll no doubt have some more specific
questions and so may well follow up on these.
Cheers
