I tend to go with Arch Linux myself, or if I've got the time and the knowledge of the system, Gentoo. Both have the same nice approach of installing the core system then saying, "Ok boss - what next?" rather than giving whole desktops. Arch (AFAIK) tries to used opt-depends unless the package breaks without it, Gentoo has it's neat system of USE flags that give just a little more choice in what to compile stuff with - but both of which allow one to install what you need, and not have to pull in entire trees of unrelated packages. Arch also has the AUR for community contributed packages, while Gentoo has Layman - though I'll admit under Gentoo even with Layman I've had to manually build some things because they're not packaged. I'll stop singing praises now and sum it up with this: Both of them allow a great deal of flexibility and optimization, without compromising... well, anything, as far as I can see.
