If you examine some of the ham in the spam folder by looking at its
‘full header’, are there some fields indicating what aspects of the
email ranked as spammy, or its overall spam score?

For example, your email which I'm replying to has

    X-Spam-Status: No, hits=-2.7 required=4.0
        tests=ARC_SIGNED,ARC_VALID,BAYES_00,DKIM_INVALID,DKIM_SIGNED,
            
FREEMAIL_FORGED_FROMDOMAIN,FREEMAIL_FROM,HEADER_FROM_DIFFERENT_DOMAINS,
            MAILING_LIST_MULTI,SPF_HELO_PASS,SPF_PASS
        autolearn=ham autolearn_force=no version=4.000000

added by one of the parties along the way.

Even if Thunderbird isn't taking notice of them, it may gives clues as
to what it is also spotting.
