This can be done (I think) by modifying the base files the wizards use.

For C# these can be found in:

...\Program Files\Microsoft Visual Studio .NET\VC#\VC#Wizards

I did a search through there for "AssemblyCompany" and turned up 8 hits.
They are all assemblyinfo.cs files I nthe various wizard's Templates
folders.

You should be able to modify these directly and have it effect the way
the Wizards work on that installation.

I don't know if there is a different/better way to do this.
