a) Let Dovecot use autodetection for finding mailboxes. Might have
problems with new users, or if user wants to use mbox but has also
~/Maildir.

b) As long as you're not using passwd or static userdb, you can override
the mail location from userdb.

c) If all else fails, set MAIL environment manually.
