If you're using Maildir, this should be fairly straightforward (with all the NFS
caveats - see http://wiki.dovecot.org/MailLocation/SharedDisk for a start).
I believe it's also possible with mbox - I know Timo put in a lot of time making
locking work reliably with mbox.
