You'll most likely want to override quota_rule, so:
alan:*:1000:1000::/home/alan::userdb_quota_rule=*:storage=2G
The rest can be kept in:
plugin {
quota = maildir
quota_rule = *:storage=1G
quota_rule2 = Trash:storage=100M
quota_rule3 = Sent:ignore # well, this works only with v1.1 actually
