OK, That would do a mailbox called spam no?

Yeah, the -m parameter just specifies the mailbox name. So:

dsync -m 'Junk E-mail' backup mbox:~/mbox-mails/

If different accounts have different names, then I guess you'll just
have to run dsync twice with each name.
