you only need to replace the tarball and the version in the SPEC and rebuild the package - for monir updates you don't need anything else if upstream has no broken release strategy, dovecot's is fine i am building dovecot the last two years without any SPEC change except version and changelog - but you won't be happy with my stripped down SPEC following our infrastructure (no configs etc.)
