Any idea of how or why this would not be showing the correct date? I've used this setup in the past on other servers with dovecot and it has worked great, no idea why we would be seeing this issue now.
I don't have an answer to your problem though your problem is the mbox format which is considered deprecated in dovecot for some time now, see https://doc.dovecot.org/admin_manual/mailbox_formats/mbox/?highlight=mbox

For production data it's advised to use any other mailbox format.
