I have tried replying twice. We have IPV6 disabled for security reasons on all server builds. An installer script failed which is how we caught this issue. We can see it is due to the config line.
A graceful fallback to IPV4 if the IPV6 stack is not available would seem to be an elegant solution that would make dovecot resilient in all circunstances.
