I managed to get it working by adding:

@Before
public void before() {
    ObjectMapper objectMapper = new ObjectMapper();
    objectMapper.registerModule(new JavaTimeModule());

    JacksonJsonProvider provider = new JacksonJsonProvider();
    provider.setMapper(objectMapper);

    APP.client().register(provider);
}

Not sure if I should open an issue for this or not.
