Hi Isabelle, You can (of course) search across *all of DSpace* (which is across all communities) by using the search box within DSpace. That's the default behavior of the search box on the DSpace homepage. For example, you can try that out on our demo site: http://demo.dspace.org/xmlui/
In OAI-PMH, the list of "sets" provided is the list of DSpace *collections* (which are slightly different than communities). OAI-PMH is a harvesting protocol, so it cannot really be searched...it's more like a machine-based browse interface. I'm not sure if this helps to answer your question.
