Dear Marc, the 5.10 is currently our preferred version, while the 6.3 is still available as a snapshot because some features of the 5.10 CRIS have not yet been ported.
I personally would recommend to stay on DSpace-CRIS version 5 until version 7 will be ready, unless there are very specific reasons to adopt version 6.
