Hi Ben, I think you are hitting this bug. Browse pages are currently not taking into account the *sort* configuration : https://github.com/DSpace/DSpace/issues/8651
So, while those browse settings should work overall, the sort option specifically is not working as expected. There are some (early) PRs for fixing this behavior, but they are still under review.
