Hi Mark, I believe what you are looking for is org.dspace.content.MetadataValue. IIRC, that class is meant to be the replacement for DCValue (as originally DCValue only supported the 'dc' schema -- though it has since been modified to have a 'schema' property). Unfortunately, as you noted, although we've deprecated DCValue, it's still widely used through most of the code.
MetadataValue itself isn't used in most places -- the best example of its usage (that I can find right now) is in Item.update() (near the end of the method). DCValue has been deprecated for a while now (since 1.5.0)-- it's probably a good idea to actually start removing it from our source code.
