Hello,

the metadata of an item is stored in the database as metadatavalue.

What metadata fields are allowed is controlled by the metadata field 
registry, which is stored in the db, too.

On a fresh installation the instance is populated with a default 
metadata field registry based on 
[dspace-source]/dspace/config/registries/dublin-core-types.xml.

Both metadatavalues for items and new entries in the metadata registry 
can be added via the DSpace UI.
