Nobody has provided a patch or taken it on as yet - it's been evaluated as low 
priority, but it is a nice little task for someone in the community to take on

    I've been meaning to report this issue to the developers.  This is an email 
that was generated by DSpace version 1.5.1 (we're in the process of upgrading 
from 1.5.1 to 1.7.1) after I created a new Eperson record online.  The problem 
is the name and email address are incorrect - they are the defaults that appear 
on the screen when I first click "Add new Eperson".  They should contain the 
name and email address that was actually added to the repository, but instead 
are listing the default values.
