    Resolution: Answered

This was caused because we forgot to setup demo.dspace.org to "reset" it's 
content every week.

So, it literally was filled up with content.

Running the following will reset it's content back to a single Communiy, single 
Collection and five sample Items:

dspace@demo:~/bin$ ./reset-dspace-content

I re-enabled this script to run via a cron job on a weekly basis.

(As a sidenote:  I also deleted all the *-bak-* directories from ~/dspace/ 
which can take up a fair amount of space themselves)
