I tried to find out how the metadata schema could also be added as part of the ant update call
https://github.com/DSpace/DSpace/blob/master/dspace/src/main/config/build.xml
Because the the fields are skipped over as you already suggested, it seems like the entire block that starts at:
https://github.com/DSpace/DSpace/blob/master/dspace/src/main/config/build.xml#L875
Could be included in the right section of the update call.
I'm not sure if this is the best thing to do, or just call load_registries entirely from the ant update.
I think we still do need to include this as part of the upgrade script or the documentation.
