Ubuntu *is* a distribution of Linux.

DSpace is used and supported on both Linux and Windows, but I would
guess that it is more often deployed on Linux.  Your level of
familiarity and skill with a particular OS is probably the most
important consideration in making your choice.

DSpace is written in Java, so it is unaware of whether your system is
in 32-bit or 64-bit mode.  You would need to install the version of
Java for the correct bit-width, but DSpace will not care.
