The behaviour you're seeing on your website is the normal behaviour for DSpace before 5.x. The behaviour you're seeing on the demo server was added in DSpace 5.0 as listed in the DSpace 5 release notes: https://wiki.duraspace.org/display/DSDOC5x/Release+Notes (look at the OAI part of the "major new features" table in the DSpace 5.0 section).

If you want to see the gory details, the new behaviour was added in this commit: https://github.com/DSpace/DSpace/commit/403d7fbee53f8a9d21b059669999e649d4838ecf
