You'd probably want to use something like the AIP export (aka
backup/restore), which creates AIPs that are very similar in structure
to the SIPs you referenced:

https://wiki.duraspace.org/display/DSDOC18/DSpace+AIP+Format
AIPs can be exported for all types of objects (Communities, Collections,
Items) and contain information about access permissions, etc. However,
they do not contain statistical information (so you'd have to find
another way to move that if you wanted it)
