I have noticed the same strange behavior in my DSpace 6_x (branch master).
If anyone is interested I have done all what he said in the demo and I
have got this url :
http://demo.dspace.org/xmlui/search-filter?query=cal&sort_by=dc.title_sort&order=asc&rpp=10&field=subject&order=COUNT
It seems to be related with something in this commit
