That is not the case. If you have "Author1||Author2" in "dc.contributor.author" and you change it to "AuthorA||AuthorB", the former will be replaced with the later.
However, make sure you're not running into the following bug, which may have symptoms similar to what you're describing: https://wiki.duraspace.org/display/DSPACE/TechnicalFaq#TechnicalFAQ-MetadatavaluesinCSVexportseemtohaveduplicatecolumns Exporting to CSV should tell you if that's the case.
