Just to clarify, modifying the "message.xml" file won't work in this scenario. The "Full Item Record" does not use that messages file (at all) when displaying the field names, instead it just displays the dublin core. (Only the "Simple Item Record" uses the messages.xml file)
So, if you want to change that behavior, you will need to modify the theme (as I described).
