I'd recommend using the latest and greatest DSpace 7 Docker image at this point. The older "Preview" release image is now outdated...and it's possible that something is not working right specifically in that image. I've just now added updated instructions for how to "Try out DSpace 7" (the latest code) via Docker or via a local install. These instructions can be found at https://wiki.lyrasis.org/display/DSPACE/Try+out+DSpace+7 Let us know if you run into any issues along the way.
